The current filtration methods can be roughly divided into centrifugal clarification, diatomite filtration, PVPP adsorption filtration, cardboard fine filtration, membrane filtration and so on.
(1) The operating process of the plate and frame diatomite filter
①Install the cardboard: After the supporting cardboard is soaked with water, install it on each filter plate in sequence (the rough surface is outward and the smooth surface is inward), and then it is pressed tightly, and the water is leak tested.
②Sterilization: After the filter is installed, use 80~85°C hot water to sterilize for 30 minutes.
③Exhaust: Pump in sterile deoxygenated water, open the exhaust valve to completely exhaust air.
④Pre-coating cycle: mix coarse and fine diatomaceous earth, mix with deoxygenated water or filtered beer at a ratio of 1:(5~10), and perform two pre-coating. For each pre-coating, the filter performs a cycle of 10-15 minutes to form two flat and uniform pre-coatings on both sides of the support plate.
⑤Into the wine top water: the beer to be filtered is ejected from the pre-coated water in the filter, if it is pre-coated for the filtered beer, the top water operation can be omitted.
⑥Filtration: Add diatomaceous earth and start the filtration cycle until the clarity of the liquor at the outlet of the filter meets the requirements, then send it to the sake tank. During the filtration process, always check the wine clarity and filtration pressure, and adjust the ratio of coarse and fine soil.
⑦Filtration end: After filtration, use deoxygenated water to eject the wine in the machine.
⑧Cleaning: Loosen the filter, rinse off the diatomaceous earth, and re-clean, compact, and sterilize the filter.
Advantages of plate and frame diatomite filter:
①Stable filtration, easy operation and low price;
②Using the support plate as the pre-coating medium, the pre-coating is firmly attached, the sedimentation is uniform, the filtration performance is consistent, and the clarity of the wine is guaranteed;
③During the filtration process, the pressure fluctuation is small, the pre-coating is not easy to fall off, the filtration is suspended, and the filtration can be performed quickly after the pressure is restored;
④Low soil consumption.
Disadvantages of plate and frame diatomite filter:
①A set of support plates need to be replaced after 20 filtration cycles, which increases the cost;
②Disassemble the plate and frame to discharge waste diatomite, which is labor intensive;
③The edge of the cardboard is exposed outside the frame, which is prone to seepage or leakage, and mold grows on the surface;
④There are more wine heads and tails.
①Preparation: Fill the entire filter system with deoxygenated water, circulate 5-lOmin and exhaust air. The sake tank uses 匸02 or ^ gas back pressure.
②Pre-coating cycle: mix coarse and fine diatomaceous earth, mix with deoxygenated water or filtered beer at a ratio of 1:(5~10), and perform two pre-coating. When pre-coating, the filter will cycle for 10-15 minutes.
③Into the wine top water: the beer to be filtered pushes out the water in the filter, and when the outlet wine concentration is qualified, normal filtration begins. If it is pre-coated with filtered beer, the top water operation can be omitted.
④Filtration: Continuously add diatomaceous earth and filter the sake to the sake tank. During the filtration process, the clarity of the wine should be checked frequently. If the turbidity exceeds the requirement, the cycle should be used, and the ratio of coarse and fine soil should be adjusted so that the pressure difference rises slowly and the pressure difference rises to the rated value, and the filtration should be stopped.
⑤Filtration end: After filtration, use deoxygenated water to eject the wine in the machine.
⑥Discharge diatomaceous earth: Rotate the hollow shaft to make the diatomaceous earth on the filter blades fall to the bottom of the tank and discharge the waste diatomaceous earth.
⑦Cleaning and sterilization: Forward and reverse flushing through cleaning spray and compressed air, and thoroughly clean with CIP at regular intervals. The entire equipment is filled with hot water above 8OT for sterilization.
Advantages of horizontal blade type silicon bath soil filter:
①The filter leaf is in a horizontal state, and the pressure fluctuation has little effect on the filter layer;
②When cleaning, backwash cleaning from the hollow shaft, drive the filter leaf to rotate, and remove the waste diatomite;
③The filtering operation and cleaning are automated, with good airtightness, and CO2 can be used to empty the wine head and tail;
④It can also be used as a PVPP filter.
Disadvantages of horizontal blade type diatomite filter:
①Diatomaceous earth can only be deposited on the filter screen on the surface of the filter leaf, and the effective area is small;
②The space height requirement of the vertical cylindrical tank is high;
③High precision of the central axis is required to ensure that the filter leaves are flat and even.
