What is the relationship between the concentration of wort and the concentration of alcohol in beer?

2020.01.13 Shandong Zunhuang

What is the relationship between wort concentration and alcohol concentration? Do they mean the same thing? Regarding this issue, many citizens think that the degree of beer is the alcohol concentration of beer, but it is not. People often say that the degree of beer is the original wort concentration of the beer, not the alcohol content.

The meaning of wort concentration:

1、Low strength beer

The concentration of wort is 6°-8°, and the alcohol content is also the lowest, generally 2%. It is most suitable for drinking as a refreshing drink in summer. The disadvantage is that it has poor stability and short storage time.

2、Medium strength beer

The concentration of wort is 10°-12°, the alcohol content is about 3.5%, and 12 degrees is the most common type. It is the main variety of beer production in my country.

3、High strength beer

The concentration of wort is 14°-20° and the alcohol content is close to 5%. It is recognized internationally that beer above 12 degrees Celsius is a premium beer. This beer has a long brewing cycle, good stability, and is resistant to storage and long-distance transportation.

The meaning of alcohol concentration:

1、Degree of beer

The degree of beer and the degree of liquor represent different meanings. The degree of liquor refers to its alcohol content, while the degree of beer refers to the concentration of wort, which is the raw material for beer production. The alcohol contained in beer is converted from maltose. For the beer marked "12°", the beer is brewed with wort with a sugar content of 12°.

2、Alcohol of beer

The alcohol content of beer is calculated by mass volume percentage (M/V%). The 12 degrees marked on the trademark refers to the original wort concentration, so the alcohol content should be about 4°. Under normal circumstances, the alcohol content of beer is mostly between 2-5%, the common light beer is 3.3-3.8%; the strong beer is 4-5%; and the alcohol content of German beer is relatively high, about 5- 9%, and the bitterness is relatively heavy. The higher the alcohol content of the beer, the better the quality.

In summary, the concentration of wort is proportional to the concentration of alcohol. For example, the original wort is lower than 10°P, and the alcohol content generally does not exceed 5 degrees, which is a low-alcohol beer. The dark beer is often as high as 15°P to 20°P, so the alcohol content is often above 5 degrees. Therefore, consumers must not confuse the original wort concentration as the alcohol content.
